These days with it just being the two of us for the most part, there isn’t a lot of planning. We’ve been known to eat out just about every night (well pick up for home) and we have been known to cook in. You just never know but somehow we always manage to say…Dinner’s Ready! Read on for a very tasty chicken dinner.
Yesterday was one of those days. Basically I sent a text to see who was planning to eat. With the response I decided to fix something at home (even though we had coupons for free burgers at Logan’s,lol). I’m really trying to eat healthier and shed some pounds so searched for a healthy, quick, easy recipe.
Ok, looks yummy – but can I switch out some of the breasts for thighs? Ronnie will not eat breasts. Nope. says they are dry. Ugh. I picked up everything I needed an headed home.
Started the prep – potatoes first
then the chicken. I was about to take out some frustration by pounding it flat hehe!
The potatoes were the. easiest. to. make. Bag of red potatoes, cut into quarters. spray the pan. drizzle with oil, salt and pepper. Bake 15 minutes. Stir. Bake for 15 minutes longer. Take out, stir, sprinkle with basil and let set until time to eat. ha!
The chicken was a tad bit more work. After ‘pounding’, placed in a sprayed pan. I followed the direction and did 6 minutes on each side. That was PERFECT!
Of course I had another pan going with the bacon –
Placed in the casserole dish then top with bbq sauce, bacon, cheese and tomatoes.
Broil until melted.
ENJOY! And you will be happy to know that Ronnie was amazed at how juicy these were and actually ate the breasts. Score for me! Even Cierra liked it even though she modified her’s a little by avoiding the bacon and tomatoes.
This one is definitely getting scanned into Evernote (that’s another fun blog post that will be coming soon). What a life changer =)
And definitely a web-site I will frequent…..You can find the recipe HERE – I basically doubled everything. You can always use your own judgement as to the amount of bbq sauce, bacon and cheese. I did also sprinkle some poultry seasoning on the chicken as it was cooking just as an added ‘kick’.
Planning, preparing and fixing dinner can certainly be challenging and time consuming. We do have a list of our ‘go to’ dinners –
- Spaghetti – Prego Traditional sauce, Jimmy Dean’s Sage Sausage, Vermicelli noodles, Garlic bread & freshly grated cheddar cheese.
- Giant Eagle/Martin’s/Sams’/Costco roasted chicken
- Breakfast – who doesn’t enjoy pancakes, eggs, bacon, OJ and some coffee?
- Soup and Grilled Cheese
